  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh mozzarella balls (bocconcini)
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves, torn
  • ½ cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Optional: pinch of sugar for balsamic reduction

Instructions

  1. Preheat your grill or skillet over medium-high heat. Season chicken breasts with salt and pepper.
  2. Grill the chicken for 6–7 minutes on each side until cooked through and golden brown.
  3. For the balsamic reduction, simmer balsamic vinegar with a pinch of sugar in a small saucepan over medium heat until reduced by half (about 10 minutes).
  4. Slice the cooked chicken into strips. In a large bowl, combine cherry tomatoes, mozzarella balls, and basil leaves.
  5. Add sliced chicken to the bowl and drizzle with balsamic reduction and olive oil; toss gently to combine.
  6. Serve warm or chill before serving as desired.
