  • 2 bell peppers (1 red, 1 yellow), sliced
  • 1 large sweet onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the bell peppers and onion into bite-sized pieces; mince the garlic.
  2. Optional: Heat olive oil in a skillet over medium-high heat and sear each chicken breast until golden brown on both sides (about 3–4 minutes per side).
  3. In your crockpot, layer the seared chicken, followed by bell peppers, onion, garlic, crushed tomatoes, chicken broth, and Italian seasoning.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender.
  5. Shred the chicken inside the crockpot using two forks; stir well to combine.
  6. Serve over pasta or rice; garnish with fresh basil if desired.
