- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup pitted prunes
- 1 cup green olives, pitted
- ½ cup red wine vinegar
- ¼ cup extra virgin olive oil
- 2 tbsp brown sugar
- 2 tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with paper towels.
- In a large bowl, mix minced garlic, prunes, olives, red wine vinegar, olive oil, brown sugar, oregano, salt, and pepper until combined.
- Add the chicken breasts to the marinade and coat evenly. Let them marinate for at least 30 minutes.
- Place the marinated chicken in a baking dish and pour any remaining marinade over it.
- Bake for about 45 minutes or until the chicken is cooked through.
