  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 nori sheets
  • 8 ounces sashimi-grade tuna or salmon
  • 1 ripe avocado, sliced
  • 1 cucumber, thinly sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha
  • 2 tablespoons eel sauce

Instructions

  1. Prep Your Rice: Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes) until tender and sticky.
  2. Season Your Rice: In a bowl, gently fold together cooked rice with rice vinegar, sugar, and salt while still warm. Let cool slightly.
  3. Prepare Fillings: Slice fresh fish into strips and cut cucumber and avocado into thin matchsticks.
  4. Assemble the Roll: Place a nori sheet shiny side down on a bamboo mat. Spread about 1 cup of seasoned rice evenly over the nori, leaving space at the top edge. Layer fish, avocado, and cucumber along the bottom edge.
  5. Roll It Up: With wet fingers, lift the bamboo mat's edge closest to you and roll tightly away from you. Seal the edge with a bit of water.
