Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.

  3. In another bowl, beat together vegetable oil and eggs until smooth. Stir in grated carrots.
  4. Combine wet ingredients with dry ingredients gently using a spatula; do not overmix.

  6. Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
