Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cups kale or Swiss chard, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Juice of 1 lemon
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic, diced carrots, and celery; cook for another 3 minutes until softened.
  3. Add canned tomatoes and vegetable broth; bring to a gentle boil while stirring.
  4. Once boiling, mix in chopped greens and drained beans. Let simmer for 10-15 minutes until greens are wilted.
  5. Before serving, squeeze lemon juice into the pot and season with salt and pepper as needed.
