  • 200g ramen noodles (fresh or dried)
  • 200g shiitake or cremini mushrooms, sliced
  • 4 cups vegetable broth
  • 2 tbsp low-sodium soy sauce
  • 1 tsp toasted sesame oil
  • 3 green onions, thinly sliced
  • 1 tbsp vegetable oil
  • 2 soft-boiled eggs (cook for 67 minutes)
  • 1 cup spinach or bok choy
  • 2 sheets nori, cut into strips
  • Chili oil (optional)

Instructions

  1. Cook the ramen noodles according to package instructions in salted boiling water until al dente (about 3-5 minutes). Drain and set aside.
  2. In a large pot over medium heat, add vegetable oil. Sauté sliced mushrooms until golden brown (approximately 5 minutes).
  3. Pour in the vegetable broth, soy sauce, and sesame oil. Simmer for about 10 minutes to meld flavors.
  4. Stir in spinach or bok choy just before serving until wilted (2-3 minutes).
  5. Assemble by placing noodles in bowls and ladling hot broth with mushrooms over them. Top with soft-boiled eggs, green onions, nori strips, and chili oil if desired.
