  • 1 can (5 oz) high-quality tuna packed in olive oil, drained
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 cup low-sodium vegetable broth
  • ¼ cup fresh parsley, chopped
  • 1 tbsp lemon juice
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot over medium-high heat. Add the penne pasta and cook until al dente according to package instructions.
  2. In a large skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent (about 3-4 minutes).
  3. Add minced garlic and cook for about 30 seconds until aromatic, but avoid burning.
  4. Pour in vegetable broth and heavy cream; stir well and bring to a gentle simmer.
  5. Fold in the drained tuna and cooked pasta; let everything mingle on low heat for a couple of minutes.
