  • 8 corn tortillas
  • 2 cups shredded cooked chicken (or veggies)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup enchilada sauce
  • 2 cups shredded cheddar cheese
  • 1 medium onion, sautéed
  • 1 cup diced bell peppers (mixed colors)
  • ½ cup sour cream
  • ¼ cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté onion in oil over medium heat until translucent; add bell peppers and cook until tender.
  3. Mix black beans with enchilada sauce in a bowl.
  4. In a baking dish, layer tortillas, chicken (or veggies), vegetable mixture, sauce mix, and cheese. Repeat layers until all ingredients are used.
  5. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until bubbly.
