  • 4 boneless, skinless chicken breasts (about 1 pound)
  • 1 cup long-grain rice (such as basmati or jasmine)
  • 1 cup mixed fresh vegetables (bell peppers, green peas, carrots)
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups low-sodium chicken broth
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Fresh parsley and thyme (to taste)

Instructions

  1. Chop the chicken into bite-sized pieces and finely dice garlic and onion.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and onion; cook until translucent.
  3. Add diced chicken to the skillet; cook until golden brown on all sides (5-7 minutes).
  4. Stir in rice and pour in chicken broth. Bring to a gentle boil, then reduce heat to low and cover to simmer until rice absorbs liquid (about 15 minutes).
  5. After 15 minutes, stir in mixed vegetables and lemon juice; add herbs and cook for an additional 5 minutes.
  6. Fluff the dish with a fork before serving, garnishing with extra herbs if desired.
