  • 4 boneless, skinless chicken breasts
  • 2 fresh limes (juiced and zested)
  • 1/4 cup pure honey
  • 3 garlic cloves (minced)
  • 2 ripe avocados (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 cup jasmine rice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing all produce. Mince the garlic and zest then juice the limes.
  2. In a bowl, combine lime juice, honey, minced garlic, salt, and pepper. Add chicken breasts to marinate for 15-20 minutes.
  3. While the chicken marinates, cook jasmine rice according to package instructions.
  4. Heat olive oil in a skillet over medium-high heat. Sear marinated chicken for about 6-7 minutes per side until golden brown and fully cooked.
  5. Once the rice is fluffy, fold in diced avocados, chopped cilantro, lime juice, and season with salt to taste.
  6. Assemble by layering avocado rice on plates followed by sliced chicken on top. Drizzle with remaining marinade and garnish with extra cilantro.
