  • 2 medium eggplants (about 1 lb total)
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice eggplants lengthwise into thin sheets (about 1/4 inch thick) and lay them on a baking sheet. Drizzle with olive oil.
  3. Roast the eggplant slices for about 20 minutes until tender but not falling apart; set aside to cool.
  4. In a mixing bowl, combine ricotta cheese, chopped spinach, salt, pepper, and half of the mozzarella. Mix well.
  5. On each eggplant slice, spoon a generous amount of filling at one end and roll up like a burrito; place seam-side down in a greased baking dish.
  6. Pour marinara sauce over the rollatini and sprinkle with remaining mozzarella and grated Parmesan.
  7. Bake for 25-30 minutes until bubbling and golden brown on top.
