Ingredients

  • 2 (6 oz) fresh salmon fillets
  • 1 cup quinoa
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh herbs (parsley or dill), chopped
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water or broth. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 15 minutes until fluffy.
  2. Preheat grill or oven to 375°F (190°C). Season salmon fillets with olive oil, salt, pepper, and lemon juice. Cook for about 12-15 minutes until cooked through.
  3. While salmon cooks, chop cucumber and halve cherry tomatoes. Thinly slice red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and chopped herbs for the dressing.
  5. In bowls, layer cooked quinoa at the bottom followed by salmon and topped with cucumber, tomatoes, red onion, and feta cheese. Drizzle with dressing before serving.
