- 1 ½ cups rolled oats
- 1 cup all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, melted
- 3 large eggs
- 2 large fresh lemons (zest and juice)
- 2 tsp baking powder
- ½ tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a large bowl, mix oats, flour, sugar, baking powder, and salt. Stir in melted butter until crumbly.
- Add lemon zest and juice to the oat mixture; combine thoroughly.
- Press two-thirds of the mixture into the bottom of the prepared pan.
- In another bowl, whisk together eggs, remaining sugar, lemon juice, and zest until smooth. Pour over the oat base.
- Sprinkle the remaining oat mixture on top of the lemon filling.
- Bake for 25-30 minutes until golden brown. Allow to cool completely before slicing.
