- 1 lb ground beef or lamb
- 1 cup fresh breadcrumbs
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1 large egg

- 1/4 tsp black pepper
- 1 cup full-fat Greek yogurt
- 1/2 cucumber, grated
- 2 tbsp lemon juice
- 2 cups cooked rice or quinoa
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C). In a large bowl, mix ground beef or lamb with breadcrumbs, parsley, garlic, egg, salt, and pepper until combined. Do not overmix.
- Form the mixture into golf ball-sized meatballs and place them on a lined baking sheet. Bake for about 20 minutes until golden brown and cooked through.
- While baking, combine Greek yogurt, grated cucumber, garlic, lemon juice, and salt in a bowl to make tzatziki sauce.
- Prepare rice or quinoa according to package instructions.
- Assemble bowls by starting with rice/quinoa as the base; top with meatballs and drizzle with tzatziki sauce. Garnish with diced tomatoes and cucumbers.
