  • 2 tsp curry powder
  • 1 tbsp fresh ginger, grated

  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger; cook for another minute.
  3. Stir in rinsed lentils, curry powder, salt, and pepper; mix well for 2 minutes.
  4. Pour in coconut milk and 2 cups of vegetable broth or water. Bring to a gentle boil.
  5. Reduce heat to low and simmer uncovered for about 25-30 minutes until lentils are tender.
  6. Add fresh spinach during the last few minutes of cooking until wilted. Adjust seasoning as needed.
