  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, thinly sliced
  • 6 cups low-sodium chicken broth
  • 1/4 cup low-sodium soy sauce
  • 8 oz fresh ramen noodles
  • 2 cups bok choy or carrots, chopped
  • 2 tsp sesame oil
  • 4 green onions, finely chopped (for garnish)
  • 4 soft-boiled eggs (optional)

Instructions

  1. Place chicken breasts in the bottom of the crockpot; season with salt and pepper.
  2. Add minced garlic and sliced ginger over the chicken.
  3. Pour chicken broth over the chicken until fully submerged; add soy sauce and stir gently.
  4. Layer in chopped bok choy or carrots on top.
  5. Cover and cook on low for 6-8 hours.
  6. About 30 minutes before serving, add ramen noodles directly into the pot; stir and cook until tender.
  7. Serve hot, garnished with green onions and soft-boiled eggs if desired.
