- 1 tsp mustard (optional)
Instructions
- Boil the eggs in a saucepan covered with cold water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 10-12 minutes and cool in ice water.
- In a mixing bowl, combine cottage cheese, chopped chives, mayonnaise (or yogurt), salt, pepper, and mustard if desired. Stir until smooth.
- Peel and chop the cooled hard-boiled eggs into small pieces; gently fold them into the cottage cheese mixture.
- Rinse lettuce leaves under cold water and pat dry; keep them whole for wrapping.
