  • 1 cup low-fat cottage cheese
  • 4 hard-boiled eggs, chopped
  • 2 tbsp fresh chives, finely chopped
  • 2 tbsp mayonnaise (or Greek yogurt)
  • 6 large lettuce leaves (romaine or butter)
  • Salt and pepper to taste
  • 1 tsp mustard (optional)

Instructions

  1. Boil the eggs in a saucepan covered with cold water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 10-12 minutes and cool in ice water.
  2. In a mixing bowl, combine cottage cheese, chopped chives, mayonnaise (or yogurt), salt, pepper, and mustard if desired. Stir until smooth.
  3. Peel and chop the cooled hard-boiled eggs into small pieces; gently fold them into the cottage cheese mixture.
  4. Rinse lettuce leaves under cold water and pat dry; keep them whole for wrapping.
  5. Place a generous spoonful of egg salad onto each lettuce leaf and fold the sides like a burrito.
  6. Serve immediately or refrigerate until ready to enjoy.
