- 1/2 red onion, thinly sliced

Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes on each side until golden brown and fully cooked.
- Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water or broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until liquid is absorbed.
- Chop cherry tomatoes, cucumber, and red onion while the chicken and quinoa cook.
- Whisk together orange juice, lemon juice, olive oil, salt, and pepper in a bowl for the dressing.
- Once cooked, let the chicken rest before slicing it into strips. In a large bowl, combine quinoa, chopped vegetables, herbs, and sliced chicken. Drizzle with dressing and toss gently to coat.
