- ½ cup brown sugar

- ¼ cup melted butter or vegetable oil
Instructions
- Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or grease it lightly.
- In a large bowl, combine rolled oats, flour, baking powder, cinnamon, and brown sugar; whisk until blended.
- In another bowl, whisk together milk, melted butter (or oil), egg, and diced apples. Pour into dry ingredients and mix until just combined.
- Fill muffin cups about three-quarters full with the batter.
- Bake for 18-20 minutes until golden brown; check doneness with a toothpick.
- Allow to cool in the pan for 5 minutes before transferring to wire racks.
