  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 medium apple, peeled and diced (about 1 cup)
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 large egg
  • ½ cup brown sugar
  • ½ cup milk (any type)
  • ¼ cup melted butter or vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or grease it lightly.
  2. In a large bowl, combine rolled oats, flour, baking powder, cinnamon, and brown sugar; whisk until blended.
  3. In another bowl, whisk together milk, melted butter (or oil), egg, and diced apples. Pour into dry ingredients and mix until just combined.
  4. Fill muffin cups about three-quarters full with the batter.
  5. Bake for 18-20 minutes until golden brown; check doneness with a toothpick.
  6. Allow to cool in the pan for 5 minutes before transferring to wire racks.
