  • 1 medium sweet onion, finely chopped
  • 6 slices of bacon, cooked and crumbled
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 4 cups low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 3 green onions, chopped (for garnish)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes into bite-sized pieces. Finely chop the onion and cut the bacon into small bits.
  2. In a skillet over medium heat, cook the bacon until crispy. Drain excess fat and add to a crockpot.
