  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 9 oz fresh cheese tortellini
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 34 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the bottom of the crockpot; drizzle with olive oil and season with salt and pepper.
  2. Scatter minced garlic over the chicken and pour in chicken broth until just submerged.
  3. Add tortellini and Italian seasoning; gently mix.
  4. Pour heavy cream over the top and add spinach; stir lightly to combine.
  5. Cook on low for 6 hours or high for 3 hours, then sprinkle with Parmesan before serving.
