  • 3 cloves fresh garlic, minced
  • 1 lb Yukon Gold potatoes, diced
  • 1/2 cup Dijon mustard
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tbsp fresh thyme or parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat, sear the chicken until golden brown (about 5 minutes per side). Remove from skillet.
  3. In the same skillet, add diced potatoes and minced garlic; cook until lightly browned (8-10 minutes).
  4. Whisk together Dijon mustard, heavy cream, and chicken broth in a bowl. Pour over chicken and potatoes in the skillet.
  5. Bake uncovered for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C) and potatoes are fork-tender.
