  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 package (16 oz) fresh gnocchi
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 package (17.3 oz) puff pastry sheets (2 sheets)
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • Fresh parsley (optional)

Instructions

  1. Dice the chicken and chop the vegetables.
  2. In a large pot over medium heat, add olive oil. Sauté onions, carrots, and celery for about 5 minutes until softened; then add garlic.
  3. Stir in the diced chicken and pour in the chicken broth. Cook until the chicken is no longer pink (6-8 minutes).
  4. Mix in the gnocchi and cream cheese until combined and creamy.
  5. Season with thyme and pepper; let simmer on low heat for about 4 minutes until gnocchi are tender.
  6. Preheat the oven to 400°F (200°C). Transfer the mixture to an oven-safe dish and cover with puff pastry, cutting slits for steam escape.
  7. Bake for 25-30 minutes until the pastry is golden brown.
