  • 1 cup green or brown lentils
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup crispy tortilla strips
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic, cumin, and chili powder; cook for another minute until fragrant.
  3. Add rinsed lentils and canned diced tomatoes with their juices; mix well.
  4. Pour in the vegetable broth to cover lentils by about an inch. Bring to a gentle boil, then reduce heat and simmer covered for 25–30 minutes until lentils are tender.
  5. Stir in lime juice and chopped cilantro before serving.
  6. Serve in bowls topped with crispy tortilla strips and any additional toppings you desire.
