  • 2 lbs russet potatoes, peeled and diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup chopped green onions
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Peel and dice the potatoes into bite-sized cubes.
  2. In a skillet, cook the bacon over medium heat until crispy; set aside.
  3. In your crockpot, combine the diced potatoes, chicken broth, heavy cream, garlic powder, onion powder, salt, pepper, and half of the crispy bacon.
  4. Stir gently to mix all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  6. For a creamier texture, mash some of the potatoes before serving.
  7. Serve topped with remaining bacon bits, shredded cheese, and chopped green onions.
