  • 2 stalks celery, diced

  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup milk
  • 4 tbsp unsalted butter, melted
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces. Chop carrots, celery, onion, and garlic finely.
  2. In a large pot over medium heat, add olive oil. Sauté onions and garlic until translucent (about 3 minutes).
  3. Stir in diced chicken with carrots and celery; cook until chicken is white on all sides (5-7 minutes).
  4. Pour in the chicken broth while scraping the bottom of the pot. Season with salt, pepper, thyme, and parsley; bring to a gentle boil.
  5. In a separate bowl, mix flour, baking powder, milk, melted butter, salt, and pepper until just combined.
  6. Drop spoonfuls of dough into the bubbling broth; cover tightly and reduce heat to low.
  7. Simmer for 15-20 minutes without lifting the lid until dumplings are fluffy.
