  • 16 oz frozen potato and cheese pierogies
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 cup sour cream
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onion until translucent (about 5 minutes). Add minced garlic and sauté for another minute.
  2. Transfer sautéed onion and garlic to the crockpot. Add chicken thighs, frozen pierogies, chicken broth, thyme, parsley, salt, and pepper. Stir gently to combine.
  3. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  4. Stir in sour cream before serving. Adjust seasoning if needed.
  5. Serve hot garnished with fresh parsley if desired.
