- 1 cup long-grain white rice
- 2 medium carrots, chopped
- 2 stalks celery, chopped

- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- Chopped parsley (optional for garnish)
Instructions
- Chop the carrots, celery, onion, and garlic into bite-sized pieces.
- Layer the chopped vegetables in the bottom of your slow cooker. Place the chicken breasts on top and season with thyme, salt, and pepper.
