  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Chopped parsley (optional for garnish)

Instructions

  1. Chop the carrots, celery, onion, and garlic into bite-sized pieces.
  2. Layer the chopped vegetables in the bottom of your slow cooker. Place the chicken breasts on top and season with thyme, salt, and pepper.
  3. Pour in the chicken broth until all ingredients are submerged.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the rice and continue cooking until tender.
  6. Shred the chicken using two forks and return it to the soup. Garnish with parsley if desired.
