  • 1 medium green cabbage (about 2 lbs), chopped
  • 2 medium carrots, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients by chopping cabbage, dicing onions and carrots, and mincing garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions and carrots until softened.
  3. Stir in minced garlic and cook until fragrant (about 30 seconds).
  4. Add chopped cabbage and mix until it begins to wilt slightly.
  5. Pour in vegetable broth and canned tomatoes (with juice), then bring to a boil.
  6. Season with thyme, bay leaf, salt, and pepper; reduce heat to simmer for about 30 minutes until veggies are tender.
  7. Taste and adjust seasoning before removing the bay leaf. Serve hot.
