  • 1 cup low-fat cottage cheese
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 pound ground turkey or beef
  • 1 (15 oz) can diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C). Slice tops off bell peppers and remove seeds; arrange upright in a baking dish.
  2. In a skillet over medium heat, sauté onions and garlic until translucent.
  3. Add ground turkey or beef along with taco seasoning; cook until browned. Stir in diced tomatoes.
  4. Remove from heat and mix in cottage cheese until well combined.
  5. Fill each pepper with the mixture and top with shredded cheese.
  6. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until cheese is bubbly.
