- 1 cup lean ground pork
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 4 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 2 tbsp tahini or peanut butter
- 1 tbsp chili oil
- 1 tsp toasted sesame oil
- 1 tsp Sichuan peppercorns (adjust to taste)
- Optional: extra chili oil for serving
Instructions
- Boil water in a large pot and cook the fresh egg noodles according to package instructions until al dente. Drain and set aside.
- In a bowl, mix together soy sauce, tahini or peanut butter, chili oil, and sesame oil until smooth; set aside.
- Heat a skillet over medium heat and add ground pork with minced garlic and grated ginger. Cook until fragrant and browned.
- Add cooked noodles to the skillet with the pork mixture. Pour in the prepared sauce and toss gently until all ingredients are well coated.
- Stir in chopped green onions and crushed Sichuan peppercorns; cook for another 1-2 minutes until heated through.
