  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • ½ cup crumbled feta cheese (optional)

Instructions

  1. 1. Cook the Quinoa: Rinse quinoa under cold water, then combine with water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  2. 2. Prep the Veggies: While quinoa cooks, chop bell peppers, cucumber, cherry tomatoes, and red onion into bite-sized pieces.
